Ingredients

The patties

  • 2 cups cooked quinoa
  • 1 cup black beans, drained and rinsed
  • 4 large eggs (or flax eggs)
  • 1 cup fresh salsa
  • 1 ounce cheddar cheese, grated (or Daiya)
  • 2 cloves garlic, minced
  • 1 cup gluten free breadcrumbs
  • 1 teaspoon cumin
  • ¼ teaspoon chipotle chili powder
  • ½ teaspoon sea salt
  • 1 tablespoon coconut oil

For serving

  • to taste avocado salsa
  • to taste spicy yogurt spread

Instructions

  1. Combine quinoa, black beans, eggs, salsa, cheese, and garlic in a medium bowl.
  2. Stir in breadcrumbs, cumin, chipotle chili powder, and sea salt. Let sit for 5 to 10 minutes.
  3. Form the mixture into small patties.
  4. Heat coconut oil in a skillet over medium-low heat.
  5. Add patties to the skillet in batches, cover, and cook until the bottoms are brown and edges dry, about 10 minutes.
  6. Flip the patties and cook for another 8 to 10 minutes until browned.
  7. Serve with avocado salsa and spicy yogurt spread.
