Southwestern Quinoa Patties

Instructions
- Combine quinoa, black beans, eggs, salsa, cheese, and garlic in a medium bowl.
- Stir in breadcrumbs, cumin, chipotle chili powder, and sea salt. Let sit for 5 to 10 minutes.
- Form the mixture into small patties.
- Heat coconut oil in a skillet over medium-low heat.
- Add patties to the skillet in batches, cover, and cook until the bottoms are brown and edges dry, about 10 minutes.
- Flip the patties and cook for another 8 to 10 minutes until browned.
- Serve with avocado salsa and spicy yogurt spread.
