Ingredients

Fritters

  • 2 cups cauliflower florets
  • 1 cup cooked quinoa
  • ½ cup quinoa flour or gluten free flour
  • 3 large eggs
  • ½ cup cashews
  • ½ cup chives
  • 1 medium red onion
  • ½ medium red pepper
  • 1 teaspoon sea salt
  • ½ teaspoon black pepper

Chive Tahini Sauce

  • 3 cloves garlic
  • ½ cup chopped chives
  • ½ cup tahini
  • 3 tablespoons lemon juice
  • ½ cup water
  • 2 tablespoons nutritional yeast
  • 1 teaspoon sea salt
  • ½ teaspoon black pepper
  • ¼ teaspoon cayenne pepper

Instructions

  1. Preheat the oven to 420°F and line a baking sheet with parchment paper, spraying it with oil.
  2. In a food processor, combine all fritter ingredients and pulse until well mixed without pureeing.
  3. Scoop the mixture onto the baking sheet and flatten each fritter.
  4. Bake for 20 minutes, then flip and bake for an additional 10-15 minutes until golden brown.
  5. For the sauce, blend all sauce ingredients until smooth, adjusting water for desired consistency.
  6. Serve the fritters warm with the Chive Tahini Sauce drizzled on top.
