Ingredients

  • ½ head cauliflower
  • 2 medium zucchini
  • ¼ cup coconut flour
  • 2 large eggs or flaxmeal
  • ½ teaspoon salt
  • ¼ teaspoon black pepper

Instructions

  1. Grate the zucchini and steam the cauliflower until fork tender.
  2. Process the cauliflower in a food processor until broken into small chunks.
  3. Squeeze out excess moisture from the grated zucchini and combine it with the cauliflower, coconut flour, eggs, salt, and pepper in a bowl.
  4. Shape the mixture into eight patties.
  5. Heat oil in a pan and cook four fritters at a time for 2-3 minutes on each side until golden brown.
  6. Serve with your favorite dipping sauce.
