Instructions
- Grate the zucchini and steam the cauliflower until fork tender.
- Process the cauliflower in a food processor until broken into small chunks.
- Squeeze out excess moisture from the grated zucchini and combine it with the cauliflower, coconut flour, eggs, salt, and pepper in a bowl.
- Shape the mixture into eight patties.
- Heat oil in a pan and cook four fritters at a time for 2-3 minutes on each side until golden brown.
- Serve with your favorite dipping sauce.
