Crispy Gluten-Free Vegan Zucchini Fritters

To serve
Instructions
- Salt the grated zucchini and let it drain in a colander for 10 minutes.
- Squeeze out as much liquid as possible from the zucchini.
- In a bowl, mix the drained zucchini with the remaining ingredients until just combined.
- Form the mixture into balls about the size of 2 tablespoons and flatten them slightly.
- Heat oil in a pan over high heat and cook the fritters for about 4 minutes on each side until golden brown.
- Serve with vegan sour cream, lime crema, or vegan Greek yogurt and lime wedges.
