Ingredients

The fritters

  • 4 cups grated zucchini
  • 1 teaspoon salt
  • 1 teaspoon garlic powder
  • ½ teaspoon sea salt
  • 1 handful parsley, chopped
  • ½ teaspoon ground black pepper
  • ¼ cup coconut flour
  • 2 flax eggs
  • 2 tablespoons coconut or olive oil

To serve

  • as needed lime wedges

Instructions

  1. Salt the grated zucchini and let it drain in a colander for 10 minutes.
  2. Squeeze out as much liquid as possible from the zucchini.
  3. In a bowl, mix the drained zucchini with the remaining ingredients until just combined.
  4. Form the mixture into balls about the size of 2 tablespoons and flatten them slightly.
  5. Heat oil in a pan over high heat and cook the fritters for about 4 minutes on each side until golden brown.
  6. Serve with vegan sour cream, lime crema, or vegan Greek yogurt and lime wedges.
