Vegan Gluten-Free Zucchini Fritters

Ingredients

The fritters

  • 3 cups grated zucchini
  • ½ cup breadcrumbs
  • ¼ cup almond flour
  • ¼ cup chopped green onions
  • 2-3 tablespoons vegan remoulade, sour cream or plain yogurt
  • ¾ teaspoon sea salt
  • ½ teaspoon ground black pepper
  • ¾ teaspoon garlic powder

Recommended sides

  • 1 package Knorr® Cajun Sides Red Beans & Rice
  • to taste shredded lettuce
  • to taste cucumbers
  • to taste vegan remoulade

Instructions

  1. Mix salt with the grated zucchini and let it sit for a few minutes.
  2. Squeeze out the liquid from the grated zucchini using a paper towel.
  3. Mix all ingredients in a bowl, including the remaining salt.
  4. Shape the mixture into patties or desired shapes.
  5. Cook in a pan over medium heat for 7-9 minutes on each side, or bake at 400°F (205°C) for 10-12 minutes on each side.
  6. Serve with sides of your choice.
