Low Carb Zucchini Fritters

Ingredients

  • 1 pound zucchini or Summer squash
  • 1 teaspoon salt
  • 2 large eggs
  • ounce onion or two medium scallions, minced
  • teaspoon lemon pepper
  • ½ teaspoon baking powder
  • ½ cup almond flour
  • ¼ cup oat fiber or 2 tablespoons coconut flour
  • ¼ cup grated Parmesan cheese
  • as needed oil for frying

Instructions

  1. Grate the zucchini and mix with salt, letting it sit to drain for about 5 minutes.
  2. Squeeze out excess moisture from the zucchini and place it in a mixing bowl.
  3. Add eggs and scallions to the zucchini and mix well.
  4. In a separate bowl, combine the dry ingredients and then add to the zucchini mixture, mixing thoroughly.
  5. Heat oil in a pan over medium-high heat until hot.
  6. Scoop ¼ cup of the mixture into the pan, flattening it slightly.
  7. Cook for about 3 minutes on each side until golden brown.
  8. Drain on paper towels before serving.
