Ingredients

  • 4 cups grated zucchini
  • ¼ cup whole wheat flour
  • 3 tbsp freshly grated Parmesan cheese
  • 2 large eggs
  • ½ tsp salt
  • ½ tsp ground black pepper
  • ¼ tsp chili pepper flakes
  • 2-3 tbsp extra-virgin olive oil

Instructions

  1. Squeeze excess water from the grated zucchini and place in a bowl with flour and Parmesan cheese.
  2. In another bowl, beat the eggs with salt, pepper, and chili flakes, then pour over the zucchini mixture and stir gently.
  3. Heat olive oil in a skillet over medium heat and drop batter by heaping tablespoons into the pan.
  4. Cook 3 to 4 fritters at a time until golden brown, about 1 to 2 minutes per side.
  5. Transfer cooked fritters to a paper towel-lined plate and repeat with the remaining batter.
  6. Serve immediately.
