Zucchini Fritters

Instructions
- Squeeze excess water from the grated zucchini and place in a bowl with flour and Parmesan cheese.
- In another bowl, beat the eggs with salt, pepper, and chili flakes, then pour over the zucchini mixture and stir gently.
- Heat olive oil in a skillet over medium heat and drop batter by heaping tablespoons into the pan.
- Cook 3 to 4 fritters at a time until golden brown, about 1 to 2 minutes per side.
- Transfer cooked fritters to a paper towel-lined plate and repeat with the remaining batter.
- Serve immediately.
