Ingredients

The fritters

  • 4 cups shredded zucchini
  • ¾ cup all purpose flour
  • ½ teaspoon baking powder
  • 1 teaspoon kosher salt
  • ¼ teaspoon pepper
  • 2 large eggs
  • ¾ teaspoon minced garlic
  • ¼ cup green onions
  • ¼ cup vegetable oil

Optional toppings

  • to taste sour cream
  • to taste sliced green onions
  • to taste crumbled bacon

Instructions

  1. Sprinkle salt over shredded zucchini and let it sit in a colander for 15 minutes.
  2. Squeeze out excess water from the zucchini and pat dry with a paper towel.
  3. In a large bowl, combine zucchini with flour, baking powder, remaining salt, pepper, eggs, garlic, and green onions to form a batter.
  4. Heat vegetable oil in a pan over medium-high heat.
  5. Drop 2 tablespoon mounds of batter into the pan and flatten them.
  6. Cook for 3-4 minutes per side until golden brown and crispy.
  7. Repeat with remaining batter and serve immediately with toppings if desired.
