Instructions
- Sprinkle salt over shredded zucchini and let it sit in a colander for 15 minutes.
- Squeeze out excess water from the zucchini and pat dry with a paper towel.
- In a large bowl, combine zucchini with flour, baking powder, remaining salt, pepper, eggs, garlic, and green onions to form a batter.
- Heat vegetable oil in a pan over medium-high heat.
- Drop 2 tablespoon mounds of batter into the pan and flatten them.
- Cook for 3-4 minutes per side until golden brown and crispy.
- Repeat with remaining batter and serve immediately with toppings if desired.
