Ingredients

The fritters

  • 8 cups Zucchini (grated)
  • 1 tsp Sea salt
  • 1 cup Grated parmesan cheese
  • 2 large Eggs
  • 2 tsp Italian seasoning
  • 4 cloves Garlic (minced)
  • 2 tbsp Olive oil (for frying)

Optional garnishes

  • to taste Sour cream (for serving)
  • to taste Fresh parsley (for garnish)

Instructions

  1. Drain the zucchini by placing it in a colander, sprinkling with salt, and letting it sit for 10-15 minutes.
  2. Wrap the zucchini in a kitchen towel and squeeze to remove excess liquid.
  3. In a bowl, mix the drained zucchini with parmesan, eggs, Italian seasoning, and minced garlic.
  4. Heat olive oil in a skillet over medium heat, then spoon the mixture into the skillet, flattening it to about 1/4 inch thick.
  5. Fry the fritters for about 2 minutes on each side until golden brown, adding more oil as needed.
  6. Drain the fritters on paper towels and serve with sour cream and parsley.
