Instructions
- Drain the zucchini by placing it in a colander, sprinkling with salt, and letting it sit for 10-15 minutes.
- Wrap the zucchini in a kitchen towel and squeeze to remove excess liquid.
- In a bowl, mix the drained zucchini with parmesan, eggs, Italian seasoning, and minced garlic.
- Heat olive oil in a skillet over medium heat, then spoon the mixture into the skillet, flattening it to about 1/4 inch thick.
- Fry the fritters for about 2 minutes on each side until golden brown, adding more oil as needed.
- Drain the fritters on paper towels and serve with sour cream and parsley.
