Instructions
- Drain the grated zucchini in a colander with salt for at least 15 minutes.
- Squeeze out excess moisture from the zucchini using a tea towel.
- In a bowl, whisk the egg and mix in the zucchini, scallions, and flour.
- Test the mixture for seasoning and texture by frying a small patty.
- Heat oil in a skillet and cook the fritters for about 2 minutes on each side until golden brown.
- Serve with lemon juice, sea salt, and tzatziki if desired.
