Simple Zucchini Fritters

Ingredients

The fritters

  • 1 lb. zucchini or summer squash, coarsely grated to yield 4 cups
  • 1 teaspoon kosher salt
  • 1 large egg
  • 4–6 pieces scallions, thinly sliced
  • ¼ cup flour
  • as needed amount grapeseed oil or olive oil for frying

For serving

  • as needed amount lemon
  • as needed amount sea salt
  • optional amount tzatziki

Instructions

  1. Drain the grated zucchini in a colander with salt for at least 15 minutes.
  2. Squeeze out excess moisture from the zucchini using a tea towel.
  3. In a bowl, whisk the egg and mix in the zucchini, scallions, and flour.
  4. Test the mixture for seasoning and texture by frying a small patty.
  5. Heat oil in a skillet and cook the fritters for about 2 minutes on each side until golden brown.
  6. Serve with lemon juice, sea salt, and tzatziki if desired.
