Ingredients

  • 4 cups shredded zucchini
  • ½ tsp sea salt
  • 2 whole eggs
  • 2 whole green onions
  • ½ tsp Italian seasoning
  • ½ tsp garlic powder
  • ¼ tsp crushed red pepper
  • ¼ tsp black pepper
  • ¼ cup gluten-free flour
  • 1–2 Tbsp ghee, coconut oil or butter

Instructions

  1. Sweat the shredded zucchini with sea salt for 10 minutes, then squeeze out excess liquid.
  2. In a separate bowl, mix eggs, green onions, Italian seasoning, garlic powder, crushed red pepper, additional sea salt, black pepper, and flour.
  3. Combine the squeezed zucchini with the egg mixture.
  4. Heat ghee in a skillet over medium heat.
  5. Drop ¼ cup portions of the mixture onto the skillet and flatten slightly.
  6. Cook each side for 3-5 minutes until golden brown, then transfer to a paper towel-lined plate.
  7. Serve with optional toppings like sour cream or paleo ranch.
