Savory Zucchini Fritters

Instructions
- Sweat the shredded zucchini with sea salt for 10 minutes, then squeeze out excess liquid.
- In a separate bowl, mix eggs, green onions, Italian seasoning, garlic powder, crushed red pepper, additional sea salt, black pepper, and flour.
- Combine the squeezed zucchini with the egg mixture.
- Heat ghee in a skillet over medium heat.
- Drop ¼ cup portions of the mixture onto the skillet and flatten slightly.
- Cook each side for 3-5 minutes until golden brown, then transfer to a paper towel-lined plate.
- Serve with optional toppings like sour cream or paleo ranch.
