Instructions
- Cut the zucchini into matchstick strips.
- Heat oil in a large frying pan over medium-high heat until shimmering.
- In a large bowl, combine zucchini, flour, egg, milk, cheese, baking powder, salt, and pepper until well mixed.
- Scoop the zucchini mixture and drop it gently into the hot oil.
- Fry in batches until both sides are golden brown and cooked through.
- Remove fritters from oil and place on paper towels to drain excess oil.
- Serve hot with Thai sweet chili sauce.
