Easy Zucchini Fritters

Ingredients

The fritters

  • 8 oz zucchini, cut into matchstick strips
  • 5 tablespoons all-purpose flour
  • 1 large egg
  • 3 tablespoons milk
  • ¼ cup shredded Parmesan cheese
  • ½ teaspoon baking powder
  • ¼ teaspoon salt
  • 3 dashes ground black pepper
  • as needed none oil, for frying

The sauce

  • as needed none Thai sweet chili sauce

Instructions

  1. Cut the zucchini into matchstick strips.
  2. Heat oil in a large frying pan over medium-high heat until shimmering.
  3. In a large bowl, combine zucchini, flour, egg, milk, cheese, baking powder, salt, and pepper until well mixed.
  4. Scoop the zucchini mixture and drop it gently into the hot oil.
  5. Fry in batches until both sides are golden brown and cooked through.
  6. Remove fritters from oil and place on paper towels to drain excess oil.
  7. Serve hot with Thai sweet chili sauce.
