Ingredients

The fritters

  • 2 medium zucchini
  • 1 teaspoon sea salt
  • 3 ounces feta
  • 4 scallions sliced thin
  • 1 jalapeño seeded and chopped
  • ¼ cup fresh chopped chives
  • 2 cloves garlic
  • 1 large egg
  • ½ cup almond flour
  • 2 teaspoons baking powder
  • ½ teaspoon fresh ground black pepper
  • to taste ghee or oil for frying

For serving

  • to taste Tzatziki Sauce

Instructions

  1. Grate the zucchini and place it in a colander over a plate, sprinkling with ½ teaspoon of salt and letting it sit for 20 minutes.
  2. In a medium bowl, combine the drained zucchini, feta, scallions, jalapeño, chives, and garlic, then stir to combine.
  3. Add the beaten egg, almond flour, baking powder, remaining salt, and pepper to the mixture and stir well.
  4. Heat ghee in a large skillet over medium heat.
  5. Using a ¼ cup measure, drop mounds of the mixture into the skillet and press to flatten.
  6. Cook for 7-10 minutes per side until crisp, adding more oil as needed.
  7. Drain the fritters on paper towels and serve with Tzatziki sauce.
