Zucchini Fritters with Feta

Instructions
- Grate the zucchini and place it in a colander over a plate, sprinkling with ½ teaspoon of salt and letting it sit for 20 minutes.
- In a medium bowl, combine the drained zucchini, feta, scallions, jalapeño, chives, and garlic, then stir to combine.
- Add the beaten egg, almond flour, baking powder, remaining salt, and pepper to the mixture and stir well.
- Heat ghee in a large skillet over medium heat.
- Using a ¼ cup measure, drop mounds of the mixture into the skillet and press to flatten.
- Cook for 7-10 minutes per side until crisp, adding more oil as needed.
- Drain the fritters on paper towels and serve with Tzatziki sauce.
