Ingredients

  • 3 medium zucchini
  • 2 large eggs
  • ½ cup crumbled feta cheese
  • ¼ cup diced yellow onion
  • cup fresh mint leaves
  • ½ teaspoon ground cumin
  • ½ teaspoon salt
  • to taste ground black pepper
  • 1 cup whole wheat flour
  • 4 teaspoons extra virgin olive oil

Instructions

  1. Shred the zucchini and squeeze out excess liquid using a kitchen towel.
  2. In a large bowl, mix the zucchini with eggs, feta, mint, onion, cumin, salt, and pepper.
  3. Stir in the flour until combined.
  4. Heat 1 teaspoon of olive oil in a nonstick skillet over medium-low heat.
  5. Scoop the mixture into the skillet using a ¼-cup measure to form patties.
  6. Flatten the patties gently and cook until golden brown, about 3 to 5 minutes per side.
  7. Repeat with the remaining mixture, adding more oil as needed.
