Instructions
- Shred the zucchini and squeeze out excess liquid using a kitchen towel.
- In a large bowl, mix the zucchini with eggs, feta, mint, onion, cumin, salt, and pepper.
- Stir in the flour until combined.
- Heat 1 teaspoon of olive oil in a nonstick skillet over medium-low heat.
- Scoop the mixture into the skillet using a ¼-cup measure to form patties.
- Flatten the patties gently and cook until golden brown, about 3 to 5 minutes per side.
- Repeat with the remaining mixture, adding more oil as needed.
