Ingredients

The fritters

  • 1 head cauliflower, riced
  • cup cassava flour
  • 1 cup shredded parmesan cheese (optional)
  • 2 large eggs (optional)
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp sea salt
  • ½ cup avocado oil

Optional toppings

  • to taste chopped scallions or chives
  • to taste coconut yogurt, greek yogurt, or sour cream
  • to taste hot sauce

Instructions

  1. Cut the cauliflower into small florets and rice them using a food processor.
  2. Mix all ingredients except avocado oil and toppings in a bowl.
  3. Form the mixture into small patties by squeezing and flattening them.
  4. Heat avocado oil in a skillet over medium-high heat.
  5. Cook the patties for 5-6 minutes on each side until golden brown.
  6. Transfer cooked fritters to a paper towel-lined plate and serve with toppings.
