Cauliflower Pancakes

Instructions
- Cut the cauliflower florets into pieces and pulse in a food processor until rice-sized. Set aside. In a large mixing bowl, combine eggs, shallots, flour, baking powder, and salt. Add cauliflower and stir. Heat 2 tbsp of avocado oil in a skillet over medium heat. Scoop ¼ cup portions of the mixture into the pan and flatten to make pancakes. Cook for 4 minutes on each side until golden brown. Repeat with remaining batter, adding oil as needed. Serve warm.
