Cauliflower Hash Browns

Ingredients

  • 1 head Cauliflower (shredded/riced)
  • ½ large Onion (shredded)
  • 2 tbsp Golden flax seed meal
  • ½ tsp Garlic salt
  • 1 large Egg
  • 1-2 large Egg white
  • 2 tbsp Avocado oil

Instructions

  1. Microwave the riced cauliflower for 2-3 minutes until tender, then set aside to cool.
  2. In a large bowl, whisk together the shredded onion, golden flaxseed meal, garlic salt, egg, and one egg white.
  3. Once cooled, drain the cauliflower rice by squeezing it in a cheesecloth or towel to remove excess moisture.
  4. Combine the drained cauliflower with the other ingredients in the bowl. If the mixture doesn't hold together, add another egg white.
  5. Heat the avocado oil in a skillet over medium heat. Form tablespoon-sized patties from the mixture and place them in the skillet.
  6. Cook for 2-4 minutes until browned, then flip and cook for another 2-4 minutes on the other side. Repeat with the remaining mixture.
