Ingredients

  • 3 cups riced cauliflower
  • 1 large egg
  • ¾ cup shredded sharp cheddar cheese
  • ¼ cup grated Parmesan
  • ½ teaspoon kosher salt
  • ¼ teaspoon ground black pepper
  • ¼ teaspoon garlic powder
  • ¼ teaspoon onion powder
  • ¼ teaspoon smoked paprika
  • Non-stick spray cooking spray

Instructions

  1. Preheat the oven to 400°F and prepare a baking sheet with non-stick spray or parchment paper.
  2. Microwave the riced cauliflower for 2 minutes and let it cool on a towel for 5 minutes.
  3. Squeeze out as much moisture as possible from the cooled cauliflower using the towel.
  4. In a mixing bowl, beat the egg and then add the cheeses and spices, mixing well.
  5. Incorporate the cauliflower into the mixture and combine thoroughly.
  6. Divide the mixture into 8 portions, shape them into patties, and place them on the baking sheet.
  7. Bake for 15 minutes, rotating the pan halfway through, then broil on low for 5 minutes until crispy.
  8. Let cool for 5 minutes before serving.
