Sweet Potato Hash Browns

Instructions
- Preheat the oven to 200°F to keep the patties warm.
- In a large bowl, combine shredded sweet potato, 1 tablespoon of olive oil, salt, pepper, garlic powder, and chipotle chili powder.
- Heat a large skillet over medium-high heat and add ½ tablespoon of olive oil and 1 tablespoon of butter.
- Once hot, scoop a heaping ½ cup of the sweet potato mixture onto the skillet and flatten it into a patty.
- Cook the patties on both sides until browned and tender, about 6 to 8 minutes total.
- Transfer cooked patties to a baking sheet in the oven to keep warm and repeat with remaining mixture.
