Ingredients

  • 2 medium sweet potatoes
  • 2 large eggs
  • 2 tablespoons flour
  • ¼ teaspoon kosher salt
  • as needed tablespoons avocado oil

Instructions

  1. Preheat the oven to 350°F and line a baking sheet with parchment paper.
  2. In a large bowl, combine shredded sweet potatoes, eggs, flour, and salt.
  3. Heat approximately 2 tablespoons of oil in a large skillet over medium-high heat.
  4. Drop about 3 tablespoon portions of the sweet potato mixture into the hot oil and flatten each.
  5. Fry the hash browns for 2 to 3 minutes, then flip and fry for another 2 to 3 minutes until browned and crispy.
  6. Transfer the fried hash browns to the prepared baking sheet and repeat until all the mixture is fried.
  7. Bake the hash browns in the oven for 8 to 10 minutes until cooked through, then serve warm.
