Instructions
- Preheat the oven to 350°F and line a baking sheet with parchment paper.
- In a large bowl, combine shredded sweet potatoes, eggs, flour, and salt.
- Heat approximately 2 tablespoons of oil in a large skillet over medium-high heat.
- Drop about 3 tablespoon portions of the sweet potato mixture into the hot oil and flatten each.
- Fry the hash browns for 2 to 3 minutes, then flip and fry for another 2 to 3 minutes until browned and crispy.
- Transfer the fried hash browns to the prepared baking sheet and repeat until all the mixture is fried.
- Bake the hash browns in the oven for 8 to 10 minutes until cooked through, then serve warm.
