Easy Sweet Potato Hashbrowns

Ingredients

  • 2 whole sweet potatoes
  • ½ whole onion
  • 3 Tbsp butter or coconut oil
  • ½ tsp sea salt
  • ¼ tsp cinnamon
  • ¼ tsp chili powder
  • a pinch ground black pepper

Instructions

  1. Peel and grate the sweet potatoes, then squeeze out excess water using a towel.
  2. Heat butter or oil in a skillet over medium-high heat until melted, then add chopped onions.
  3. Sauté the onions for 1 to 2 minutes, then add the shredded sweet potatoes.
  4. Season with salt, pepper, cinnamon, and chili powder, and let the potatoes cook without stirring for 5 to 8 minutes until slightly browned.
  5. Flip the sweet potatoes and cook the other side for an additional 5 minutes, seasoning as necessary.
  6. Serve and enjoy!
