Instructions
- Rinse, dry, and peel the sweet potatoes, then grate them using a cheese grater to yield about 4.5 cups.
- In a large bowl, combine the grated sweet potatoes with garlic powder, salt, and pepper, mixing well.
- Heat olive oil in a large skillet over medium heat until fragrant.
- Add the sweet potato mixture to the skillet and cook for 5 minutes.
- Flip the hash browns and cook for another 5 minutes.
- Increase the heat to high and cook for an additional 4 minutes, stirring and flipping after 2 minutes.
- Serve warm.
