Instructions
- Preheat the oven to 400ºF and prepare 1 to 2 large sheet pans.
- In a large bowl, combine the sweet potatoes, bell peppers, and onion.
- Drizzle with olive oil, chili powder, and salt, then toss to coat.
- Pour the vegetables onto the sheet pan in a single layer.
- Bake in the oven for 30 minutes.
- Flip the vegetables with a spatula and return to the oven for an additional 15 minutes until golden and caramelized.
- If serving with eggs, cook them in a separate skillet around the 35-40 minute mark.
- Serve warm, and store leftovers in an airtight container for up to 3-4 days.
