Instructions
- Preheat the oven to 400°F (204°C).
- Cook the bacon in a cast iron skillet over medium heat until crispy, then chop and set aside.
- Remove excess grease from the skillet and add olive oil, heating over medium-high heat.
- Add sweet potatoes to the skillet and cook until they start to become tender and lightly browned.
- Add the red pepper, onion, garlic, smoked paprika, cumin, sea salt, and black pepper to the skillet and cook until the vegetables are tender.
- Stir in the cooked bacon.
- Make 4 wells in the mixture and crack an egg into each well.
- Transfer the skillet to the oven and cook until the eggs reach your desired doneness.
