Smoky Bacon Sweet Potato Hash & Eggs

Instructions
- Preheat the oven to 400°F.
- Cook the diced bacon in a large skillet over medium heat until crispy, about 5 minutes, then remove and drain on paper towels.
- Add the diced sweet potatoes to the skillet and cook for 5-7 minutes until they start to brown.
- Add the red onion, red pepper, smoked paprika, and salt to the skillet, stir, and sauté for 3-5 minutes until the vegetables are tender.
- Return the bacon to the skillet, stir to combine, and then place the skillet in the oven.
- Bake the hash for 10 minutes, then remove from the oven.
- Create 6 wells in the potato mixture and crack an egg into each well. Return the skillet to the oven and cook until the eggs are done to your liking, about 5-7 minutes.
- Remove from the oven, add sliced avocado and chives on top, and serve.
