Smoky Bacon Sweet Potato Hash & Eggs

Ingredients

The hash

  • 4 strips smoked bacon, diced
  • 2 medium sweet potatoes, diced (about 4–5 cups)
  • 1 cup diced red onion
  • 1 medium red pepper, diced
  • 1 teaspoon smoked paprika
  • 1 teaspoon sea salt

The toppings

  • 6 large eggs
  • 2 medium avocados, sliced
  • to taste none chives (for garnish)

Instructions

  1. Preheat the oven to 400°F.
  2. Cook the diced bacon in a large skillet over medium heat until crispy, about 5 minutes, then remove and drain on paper towels.
  3. Add the diced sweet potatoes to the skillet and cook for 5-7 minutes until they start to brown.
  4. Add the red onion, red pepper, smoked paprika, and salt to the skillet, stir, and sauté for 3-5 minutes until the vegetables are tender.
  5. Return the bacon to the skillet, stir to combine, and then place the skillet in the oven.
  6. Bake the hash for 10 minutes, then remove from the oven.
  7. Create 6 wells in the potato mixture and crack an egg into each well. Return the skillet to the oven and cook until the eggs are done to your liking, about 5-7 minutes.
  8. Remove from the oven, add sliced avocado and chives on top, and serve.
