Instructions
- 1. Heat a skillet and cook the bacon until crisp, then transfer it to a plate.
- 2. In the same skillet, add sweet potatoes and onions, season with cumin, paprika, salt, and pepper, and toss.
- 3. Cover and cook, stirring occasionally, until sweet potatoes soften.
- 4. Add kale and cover, cooking until it wilts.
- 5. Toss in the cooked bacon and diced avocado, and serve warm with optional toast and eggs.
