Sweet Potato Hash & Eggs

Ingredients

  • 3 pieces sweet potatoes, peeled and diced
  • 3 strips bacon, diced
  • 2 cloves garlic, minced
  • 1 teaspoon dry rosemary
  • ½ teaspoon smoked paprika
  • ¼ teaspoon dry thyme
  • to taste salt
  • 1 tablespoon grape seed oil
  • 4 pieces eggs
  • 2 pieces avocado, sliced

Instructions

  1. Preheat a large nonstick skillet to medium-high heat.
  2. Cook the bacon in the skillet until crispy, about 3-5 minutes, then remove and set aside.
  3. Add the diced sweet potatoes to the skillet with the bacon grease, tossing to coat.
  4. Season the sweet potatoes with smoked paprika, rosemary, thyme, salt, and minced garlic, mixing well.
  5. Sauté the sweet potatoes until slightly browned, stirring occasionally for about 10-12 minutes.
  6. In another skillet, heat to medium-high and add cooking spray or grape seed oil.
  7. Cook the eggs in the skillet to your desired doneness.
  8. Serve the eggs on top of the sweet potato hash and sliced avocado on the side.
