Sweet Potato Hash & Eggs

Instructions
- Preheat a large nonstick skillet to medium-high heat.
- Cook the bacon in the skillet until crispy, about 3-5 minutes, then remove and set aside.
- Add the diced sweet potatoes to the skillet with the bacon grease, tossing to coat.
- Season the sweet potatoes with smoked paprika, rosemary, thyme, salt, and minced garlic, mixing well.
- Sauté the sweet potatoes until slightly browned, stirring occasionally for about 10-12 minutes.
- In another skillet, heat to medium-high and add cooking spray or grape seed oil.
- Cook the eggs in the skillet to your desired doneness.
- Serve the eggs on top of the sweet potato hash and sliced avocado on the side.
