Ingredients

The hash

  • 4 teaspoons avocado oil
  • ½ small red onion, chopped
  • 1 medium poblano pepper, chopped
  • 2 cloves garlic, thinly sliced
  • 1 large sweet potato, cut into ½-inch cubes
  • 1 teaspoon chili powder
  • 4 leaves lacinato kale, torn
  • 4 large eggs
  • to taste sea salt
  • to taste black pepper

The toppings

  • 1 medium avocado, sliced
  • to taste fresh cilantro leaves
  • to taste hot sauce
  • to taste lime wedges

Instructions

  1. Heat 2 teaspoons of avocado oil in a large skillet over medium heat.
  2. Add the onion, poblano, garlic, and salt; cook until softened.
  3. Remove the veggies from the pan and set aside.
  4. Add the remaining avocado oil to the skillet and cook the sweet potatoes with salt until fork-tender.
  5. Stir in the sautéed veggies, chili powder, and kale.
  6. Make wells in the hash and crack the eggs into them.
  7. Cover the pan and cook until the eggs are just set.
  8. Season with salt and pepper, then top with avocado and cilantro.
  9. Serve with hot sauce and lime wedges.
