Instructions
- Heat 2 teaspoons of avocado oil in a large skillet over medium heat.
- Add the onion, poblano, garlic, and salt; cook until softened.
- Remove the veggies from the pan and set aside.
- Add the remaining avocado oil to the skillet and cook the sweet potatoes with salt until fork-tender.
- Stir in the sautéed veggies, chili powder, and kale.
- Make wells in the hash and crack the eggs into them.
- Cover the pan and cook until the eggs are just set.
- Season with salt and pepper, then top with avocado and cilantro.
- Serve with hot sauce and lime wedges.
