Ingredients

The hash

  • pounds sweet potato (orange-fleshed variety)
  • 1-2 tablespoons neutral oil (such as canola or avocado)
  • ½ teaspoon kosher salt
  • 1 medium red onion (diced)
  • 1 medium orange bell pepper (diced)
  • ½ teaspoon Old Bay seasoning
  • ½ teaspoon smoked paprika
  • ½ teaspoon garlic powder

For serving

  • to taste avocado slices (optional)

Instructions

  1. Clean and peel the sweet potatoes, then dice them into ½ inch pieces.
  2. Heat a 12-inch skillet over medium-high heat and drizzle with oil.
  3. Add the diced sweet potato and sauté for 4-5 minutes until some pieces are golden.
  4. Reduce heat to medium-low, add salt, cover, and cook for 15-20 minutes until tender, stirring occasionally.
  5. Remove the lid and add the diced onion, pepper, Old Bay seasoning, smoked paprika, and garlic powder.
  6. Continue cooking uncovered for an additional 15 minutes, stirring every 2-3 minutes.
  7. Serve the hash as is or topped with avocado, fried eggs, or tofu scramble.
