Sweet Potato Breakfast Hash

Instructions
- Clean and peel the sweet potatoes, then dice them into ½ inch pieces.
- Heat a 12-inch skillet over medium-high heat and drizzle with oil.
- Add the diced sweet potato and sauté for 4-5 minutes until some pieces are golden.
- Reduce heat to medium-low, add salt, cover, and cook for 15-20 minutes until tender, stirring occasionally.
- Remove the lid and add the diced onion, pepper, Old Bay seasoning, smoked paprika, and garlic powder.
- Continue cooking uncovered for an additional 15 minutes, stirring every 2-3 minutes.
- Serve the hash as is or topped with avocado, fried eggs, or tofu scramble.
