Sweet Potato Breakfast Hash

Instructions
- 1. Steam the chopped sweet potatoes until just tender, about 10 minutes.
- 2. In a large skillet, cook the bacon pieces over medium heat until browned, then remove and set aside, leaving the grease in the pan.
- 3. Add the ground beef to the skillet and cook until browned, then stir in the ground fennel seed, thyme, and salt.
- 4. Remove the beef from the skillet and add the diced onion, cooking until translucent.
- 5. Add the cooked sweet potatoes to the skillet and brown them slightly.
- 6. Stir in the cooked bacon, ground beef, and diced prunes, cooking everything together for a few minutes.
- 7. Season with salt and pepper to taste, and serve with fried eggs.
