Ingredients

The base

  • 2 lbs sweet potatoes (peeled and chopped)
  • 6 slices bacon (chopped)
  • ½ lb ground beef
  • 1 small onion (diced)
  • 8 units eggs

The seasonings

  • ½ tsp ground fennel seed
  • ¼ tsp thyme
  • ½ tsp salt

The sweet addition

  • cup diced prunes (about 12 prunes)

Instructions

  1. 1. Steam the chopped sweet potatoes until just tender, about 10 minutes.
  2. 2. In a large skillet, cook the bacon pieces over medium heat until browned, then remove and set aside, leaving the grease in the pan.
  3. 3. Add the ground beef to the skillet and cook until browned, then stir in the ground fennel seed, thyme, and salt.
  4. 4. Remove the beef from the skillet and add the diced onion, cooking until translucent.
  5. 5. Add the cooked sweet potatoes to the skillet and brown them slightly.
  6. 6. Stir in the cooked bacon, ground beef, and diced prunes, cooking everything together for a few minutes.
  7. 7. Season with salt and pepper to taste, and serve with fried eggs.
