Sweet Potato Apple Breakfast Hash

Ingredients

  • 4 slices thick-cut bacon
  • 4 medium sweet potatoes
  • 2 whole apples
  • 2 whole shallots or 1/2 onion
  • 1 sprig fresh rosemary
  • 4 whole eggs
  • 1 teaspoon sea salt
  • ½ teaspoon freshly-ground black pepper

Instructions

  1. Peel and chop the sweet potatoes, apples, and bacon into bite-sized pieces.
  2. Heat a large skillet over medium heat and add the bacon, cooking for 2-3 minutes.
  3. Add the chopped sweet potatoes, apples, shallots or onion, and fresh rosemary to the skillet. Cover and cook for 10 minutes.
  4. Once softened, reduce heat to low and crack the eggs on top of the hash. Cover and cook for 5 more minutes.
  5. Turn off the heat, season with salt and pepper, and serve hot. Store leftovers in a sealed container.
