Sweet Potato Apple Breakfast Hash

Instructions
- Peel and chop the sweet potatoes, apples, and bacon into bite-sized pieces.
- Heat a large skillet over medium heat and add the bacon, cooking for 2-3 minutes.
- Add the chopped sweet potatoes, apples, shallots or onion, and fresh rosemary to the skillet. Cover and cook for 10 minutes.
- Once softened, reduce heat to low and crack the eggs on top of the hash. Cover and cook for 5 more minutes.
- Turn off the heat, season with salt and pepper, and serve hot. Store leftovers in a sealed container.
