Ingredients

The hash

  • 8 ounces bacon
  • 1 medium onion
  • 1 medium red bell pepper
  • 2 pounds sweet potatoes
  • 1 teaspoon chopped fresh thyme
  • ½ teaspoon salt
  • ¼ teaspoon pepper

For serving

  • 1 loaf crusty bread or challah
  • 4 tablespoons butter
  • 8 large eggs

Instructions

  1. Fry the bacon in a large skillet over medium heat until crisp, then transfer to a plate and leave the fat in the pan.
  2. Add the diced onion and red pepper to the skillet and cook until softened.
  3. Stir in the sweet potatoes, salt, and pepper. Cover and cook until the sweet potatoes are softened and browning.
  4. Add the cooked bacon and thyme to the skillet, seasoning to taste.
  5. Serve with grilled bread and fried eggs if desired.
  6. To serve, grill the bread slices in butter until golden brown.
  7. Fry the eggs in the reserved bacon fat or butter to the desired doneness.
