Instructions
- Fry the bacon in a large skillet over medium heat until crisp, then transfer to a plate and leave the fat in the pan.
- Add the diced onion and red pepper to the skillet and cook until softened.
- Stir in the sweet potatoes, salt, and pepper. Cover and cook until the sweet potatoes are softened and browning.
- Add the cooked bacon and thyme to the skillet, seasoning to taste.
- Serve with grilled bread and fried eggs if desired.
- To serve, grill the bread slices in butter until golden brown.
- Fry the eggs in the reserved bacon fat or butter to the desired doneness.
