Sweet Potato Hash

Instructions
- Steam the sweet and white potatoes until tender but firm, about 10 to 15 minutes.
- While the potatoes are cooking, remove the sausage from its casings and chop it.
- Cook the sausage in a large skillet over medium heat until browned and cooked through, then remove it from the skillet, leaving the grease.
- Add the diced onion to the skillet and cook for a minute, then add the yellow pepper and cook until crisp-tender.
- Return the sausage to the skillet and add the cooked potatoes, cooking everything together for a couple of minutes to brown the potatoes.
- In a separate skillet, cook the eggs to your liking (fried or sunny side up).
- Serve the hash warm with the cooked eggs on top.
