Ingredients

The hash

  • lbs sweet potatoes
  • ½ lb white potatoes
  • 1 lb mild sausage
  • 1 small onion
  • 1 yellow pepper yellow pepper

The eggs

  • 8 units eggs

Instructions

  1. Steam the sweet and white potatoes until tender but firm, about 10 to 15 minutes.
  2. While the potatoes are cooking, remove the sausage from its casings and chop it.
  3. Cook the sausage in a large skillet over medium heat until browned and cooked through, then remove it from the skillet, leaving the grease.
  4. Add the diced onion to the skillet and cook for a minute, then add the yellow pepper and cook until crisp-tender.
  5. Return the sausage to the skillet and add the cooked potatoes, cooking everything together for a couple of minutes to brown the potatoes.
  6. In a separate skillet, cook the eggs to your liking (fried or sunny side up).
  7. Serve the hash warm with the cooked eggs on top.
