Sweet Potato Hash with Sausage

Instructions
- Cook the pork sausage in a large skillet over medium-high heat until browned, about 10 minutes, then transfer to a paper towel-lined plate.
- In the same skillet, add the diced sweet potatoes and Brussels sprouts, cover, and cook for 5 minutes, then uncover and cook for another 5 minutes, stirring occasionally.
- Add the diced bell pepper, onion, and garlic to the skillet and cook uncovered for 8-10 minutes until softened.
- Return the cooked sausage to the skillet, stir until heated through, and serve.
