Ingredients

The hash

  • 1 lb. bulk pork sausage
  • 1 medium sweet potato, peeled and diced
  • 8 ounces Brussels sprouts, quartered
  • 1 medium bell pepper, diced
  • ½ small red onion, sliced
  • 2 cloves garlic, minced

Cooking oil

  • 1-2 teaspoons avocado oil, olive oil, ghee, or butter

Optional toppings

  • 1 fried egg for topping
  • to taste chopped fresh cilantro

Instructions

  1. Cook the pork sausage in a large skillet over medium-high heat until browned, about 10 minutes, then transfer to a paper towel-lined plate.
  2. In the same skillet, add the diced sweet potatoes and Brussels sprouts, cover, and cook for 5 minutes, then uncover and cook for another 5 minutes, stirring occasionally.
  3. Add the diced bell pepper, onion, and garlic to the skillet and cook uncovered for 8-10 minutes until softened.
  4. Return the cooked sausage to the skillet, stir until heated through, and serve.
