Ingredients

The Hash

  • 1 lb. bulk pork sausage
  • 1 medium sweet potato, peeled and diced
  • 8 ounces Brussels sprouts, quartered
  • 1 medium bell pepper, diced
  • ½ small red onion, sliced
  • 2 cloves garlic, minced

Cooking Oil

  • 1-2 teaspoons avocado oil, olive oil, ghee, or butter

Optional Toppings

  • 1 fried egg optional topping
  • to taste chopped fresh cilantro

Instructions

  1. Cook the pork sausage in a large skillet over medium-high heat until browned, about 10 minutes.
  2. Transfer the cooked sausage to a paper towel-lined plate, leaving the residual oil in the skillet.
  3. Add diced sweet potatoes and Brussels sprouts to the skillet, cover, and cook for 5 minutes.
  4. Uncover and stir occasionally, cooking for another 5 minutes, adding oil if necessary.
  5. Add bell pepper, onion, and garlic, and cook uncovered for 8-10 minutes until softened.
  6. Return the cooked sausage to the skillet, stir to heat through, and serve.
