Sweet Potato Hash with Sausage

Instructions
- Cook the pork sausage in a large skillet over medium-high heat until browned, about 10 minutes.
- Transfer the cooked sausage to a paper towel-lined plate, leaving the residual oil in the skillet.
- Add diced sweet potatoes and Brussels sprouts to the skillet, cover, and cook for 5 minutes.
- Uncover and stir occasionally, cooking for another 5 minutes, adding oil if necessary.
- Add bell pepper, onion, and garlic, and cook uncovered for 8-10 minutes until softened.
- Return the cooked sausage to the skillet, stir to heat through, and serve.
