Ingredients

The hash

  • 1 pound sweet potatoes
  • 2 teaspoons white wine vinegar
  • 2 teaspoons kosher salt
  • 8 ounces Italian sausage
  • 1 to 2 tablespoons extra-virgin olive oil
  • 2 red bell peppers red bell peppers
  • 3 medium green onions
  • ½ teaspoon Sriracha
  • ¼ teaspoon ground black pepper
  • 4 large eggs

For serving

  • as needed diced avocado
  • as needed non-fat plain Greek yogurt
  • as needed shredded cheddar cheese

Instructions

  1. Preheat the oven to 400°F and boil the sweet potatoes with vinegar and salt until tender.
  2. Brown the Italian sausage in a skillet, then set aside.
  3. Sauté the bell peppers in the same skillet, then add the sweet potatoes and cook until lightly browned.
  4. Stir in the sausage, half of the green onions, Sriracha, black pepper, and remaining salt.
  5. Create wells in the mixture and crack an egg into each well.
  6. Bake in the oven for 10 to 15 minutes, or until the eggs are cooked to your liking.
  7. Serve immediately with desired toppings.
