Sweet Potato Hash with Sausage and Bell Peppers

Instructions
- Preheat the oven to 400°F and boil the sweet potatoes with vinegar and salt until tender.
- Brown the Italian sausage in a skillet, then set aside.
- Sauté the bell peppers in the same skillet, then add the sweet potatoes and cook until lightly browned.
- Stir in the sausage, half of the green onions, Sriracha, black pepper, and remaining salt.
- Create wells in the mixture and crack an egg into each well.
- Bake in the oven for 10 to 15 minutes, or until the eggs are cooked to your liking.
- Serve immediately with desired toppings.
