Sweet Potato Hash with Baked Eggs

Ingredients

The hash

  • 2 medium sweet potatoes, diced into 1/2-inch chunks (~3 cups)
  • 1 medium green bell pepper, finely diced
  • ½ medium yellow onion, finely diced
  • 2 tablespoons olive oil
  • ¼ teaspoon salt
  • teaspoon ground black pepper
  • ¼ teaspoon smoked paprika
  • 1 teaspoon dried oregano
  • teaspoons garlic powder
  • 8-10 links fully-cooked turkey sausage, sliced into small chunks

The eggs

  • 4-6 large eggs
  • ½ cup shredded cheddar cheese (optional)

Instructions

  1. Preheat the oven to 400ºF.
  2. Wash and dice the sweet potatoes into 1/2-inch chunks and place them on a baking sheet.
  3. Finely dice the green bell pepper and yellow onion, then add them to the baking sheet.
  4. Drizzle with olive oil and season with salt, pepper, smoked paprika, oregano, and garlic powder. Toss to combine and spread evenly.
  5. Roast the veggies in the oven for 10 minutes.
  6. Remove from the oven, toss the veggies, and add the sliced turkey sausage. Toss again and roast for another 10 minutes.
  7. Create nests in the veggies for the eggs by pushing them aside. Spray the nests with cooking spray.
  8. Crack the eggs into the nests and season with salt and pepper.
  9. Return to the oven and roast for 7-9 minutes until the eggs are cooked to your liking.
  10. If using cheese, sprinkle it on top of the eggs and bake for an additional 1-2 minutes to melt.
