Sweet Potato Hash with Baked Eggs

The eggs

shredded cheddar cheese (optional)
Instructions
- Preheat the oven to 400ºF.
- Wash and dice the sweet potatoes into 1/2-inch chunks and place them on a baking sheet.
- Finely dice the green bell pepper and yellow onion, then add them to the baking sheet.
- Drizzle with olive oil and season with salt, pepper, smoked paprika, oregano, and garlic powder. Toss to combine and spread evenly.
- Roast the veggies in the oven for 10 minutes.
- Remove from the oven, toss the veggies, and add the sliced turkey sausage. Toss again and roast for another 10 minutes.
- Create nests in the veggies for the eggs by pushing them aside. Spray the nests with cooking spray.
- Crack the eggs into the nests and season with salt and pepper.
- Return to the oven and roast for 7-9 minutes until the eggs are cooked to your liking.
- If using cheese, sprinkle it on top of the eggs and bake for an additional 1-2 minutes to melt.
