Ingredients

  • 4 cups cauliflower rice
  • ½ cup parmesan cheese
  • 2 large eggs
  • 2 tablespoons olive oil
  • ½ teaspoon salt
  • to taste black pepper

Instructions

  1. Preheat the oven to 200C/400F and line a baking sheet with parchment paper.
  2. Microwave the riced cauliflower for 2 minutes until tender, then let it sit for 10 minutes and squeeze out excess moisture.
  3. In a large mixing bowl, combine the cauliflower with the remaining ingredients and mix well.
  4. Form the mixture into 8 small rectangular portions and place them on the baking sheet.
  5. Bake for 40-45 minutes or until golden brown, then let cool for 5 minutes before serving.
