Herby Cauliflower Fritters

Ingredients

The sauce

  • 1⅓ cups whole-milk Greek yogurt
  • 2 tsp finely grated lemon zest
  • 2 tsp fresh lemon juice
  • 1 clove garlic, finely grated
  • 1 Tbsp extra-virgin olive oil
  • ½ tsp Diamond Crystal kosher salt

The fritters

  • 10 oz frozen riced cauliflower
  • 1 large egg
  • 1 large egg yolk
  • 2 oz Parmesan, finely grated
  • 1 cup panko
  • ¾ cup finely chopped mixed tender herbs
  • ½ tsp freshly ground pepper
  • ¼ medium red onion, thinly sliced
  • cups baby arugula
  • ¼ cup extra-virgin olive oil
  • 2 Tbsp finely grated lemon zest
  • 2 cloves garlic, finely chopped
  • 2 tsp Diamond Crystal kosher salt

Instructions

  1. Prepare the sauce by whisking together yogurt, lemon zest, lemon juice, one grated garlic clove, olive oil, and salt; set aside.
  2. Cook the frozen riced cauliflower until tender, then let it cool before mixing with egg, egg yolk, Parmesan, panko, herbs, salt, pepper, remaining garlic, and lemon zest; form into balls.
  3. Heat olive oil in a skillet and cook the fritter balls until golden brown on all sides.
  4. Toss sliced red onion, arugula, and herb leaves with oil and salt to create a salad.
  5. Serve the fritters on a platter with the sauce and top with the salad.
