Instructions
- Prepare the sauce by whisking together yogurt, lemon zest, lemon juice, one grated garlic clove, olive oil, and salt; set aside.
- Cook the frozen riced cauliflower until tender, then let it cool before mixing with egg, egg yolk, Parmesan, panko, herbs, salt, pepper, remaining garlic, and lemon zest; form into balls.
- Heat olive oil in a skillet and cook the fritter balls until golden brown on all sides.
- Toss sliced red onion, arugula, and herb leaves with oil and salt to create a salad.
- Serve the fritters on a platter with the sauce and top with the salad.
