Whipped Feta Dip with Roasted Cauliflower

Instructions
- Preheat the oven to 375°F and line a baking sheet with parchment paper.
- Cut the cauliflower into medium to small-sized pieces and transfer to the baking sheet.
- Coat the cauliflower with olive oil, salt, pepper, garlic powder, and onion powder.
- Bake for 20-30 minutes until cooked through and golden, then allow to cool.
- In a bowl, break the feta cheese into small pieces and add Greek yogurt, lemon juice, and lemon zest.
- Whip the feta mixture until smooth and light using a hand mixer.
- Cover and refrigerate the whipped feta.
- Prepare the chopped parsley.
- Spread the whipped feta in a serving dish and drizzle with olive oil.
- Arrange the roasted cauliflower around the dish, garnish with parsley and walnut crumble.
- Serve immediately with pita bread, toasted sourdough, or tortilla chips.
