Whipped Feta Dip with Roasted Cauliflower

Ingredients

The dip

  • 1 cup feta cheese
  • ½ cup Greek yogurt
  • 1 tbsp fresh lemon juice
  • 1 tbsp fresh lemon zest
  • ¼ cup fresh parsley
  • 2-3 tbsp toasted walnut crumble

The roasted cauliflower

  • ½ head cauliflower
  • 3 tbsp olive oil
  • ½ tsp salt
  • ½ tsp black pepper
  • ½ tsp garlic powder
  • ½ tsp onion powder

Optional

  • to taste tbsp olive oil

Instructions

  1. Preheat the oven to 375°F and line a baking sheet with parchment paper.
  2. Cut the cauliflower into medium to small-sized pieces and transfer to the baking sheet.
  3. Coat the cauliflower with olive oil, salt, pepper, garlic powder, and onion powder.
  4. Bake for 20-30 minutes until cooked through and golden, then allow to cool.
  5. In a bowl, break the feta cheese into small pieces and add Greek yogurt, lemon juice, and lemon zest.
  6. Whip the feta mixture until smooth and light using a hand mixer.
  7. Cover and refrigerate the whipped feta.
  8. Prepare the chopped parsley.
  9. Spread the whipped feta in a serving dish and drizzle with olive oil.
  10. Arrange the roasted cauliflower around the dish, garnish with parsley and walnut crumble.
  11. Serve immediately with pita bread, toasted sourdough, or tortilla chips.
