Cheesy Roasted Cauliflower Dip

Instructions
- Preheat the oven to 400°F.
- Toss cauliflower florets with olive oil, salt, and pepper, then arrange on a baking sheet and roast for 25 to 30 minutes, tossing halfway through.
- Transfer roasted cauliflower to a food processor and add garlic, cream cheese, Greek yogurt, 1 cup of Parmesan cheese, white cheddar cheese, and salt; process until smooth.
- Stir in green onions and red pepper flakes.
- Transfer the mixture to a baking dish, top with the remaining ½ cup of Parmesan cheese, and bake for about 20 minutes until golden and bubbly.
- Remove from the oven, top with additional green onions, and serve warm with baguette slices, crackers, or veggies.
