Cheesy Roasted Cauliflower Dip

Ingredients

  • 1 head cauliflower, cut into florets
  • 2 Tbsp olive oil
  • 4 cloves garlic, minced
  • 4 oz cream cheese
  • ½ cup plain Greek yogurt
  • cups grated Parmesan cheese, divided
  • ½ cup shredded white cheddar cheese
  • ¼ tsp salt
  • ¼ cup green onions
  • pinch red pepper flakes

Instructions

  1. Preheat the oven to 400°F.
  2. Toss cauliflower florets with olive oil, salt, and pepper, then arrange on a baking sheet and roast for 25 to 30 minutes, tossing halfway through.
  3. Transfer roasted cauliflower to a food processor and add garlic, cream cheese, Greek yogurt, 1 cup of Parmesan cheese, white cheddar cheese, and salt; process until smooth.
  4. Stir in green onions and red pepper flakes.
  5. Transfer the mixture to a baking dish, top with the remaining ½ cup of Parmesan cheese, and bake for about 20 minutes until golden and bubbly.
  6. Remove from the oven, top with additional green onions, and serve warm with baguette slices, crackers, or veggies.
