Roasted Cauliflower White Pizza Dip

Ingredients

The dip

  • 1 cup head of cauliflower (about 4-5) cut into small pieces
  • 1 tablespoon olive oil
  • 2 cloves garlic
  • 1 teaspoon dried basil
  • 1 teaspoon dried parsley
  • 1 teaspoon dried oregano
  • ½ teaspoon dried thyme
  • ½ teaspoon dried rosemary
  • ½ teaspoon cayenne pepper
  • ¼ teaspoon crushed red pepper flakes
  • to taste salt and pepper
  • 8 ounces mascarpone cheese (may use cream cheese)
  • ½ cup mozzarella cheese, shredded, plus more for topping
  • ½ cup provolone cheese, shredded, plus more for topping
  • 3 ounces parmesan cheese, grated

Optional toppings/Stir Ins

  • to taste sun-dried tomatoes
  • to taste pepperoni's
  • to taste kalamata olives

Instructions

  1. Preheat the oven to 450°F.
  2. Toss the cauliflower with olive oil, salt, and pepper in a bowl and spread it on a baking pan.
  3. Add the garlic cloves (in their skin) to the pan and roast for 25-30 minutes until tender and golden, turning halfway through.
  4. Remove the garlic from its skin and discard the skin.
  5. Lower the oven temperature to 350°F.
  6. Add the roasted cauliflower and garlic to a food processor along with the herbs and spices, and pulse until combined.
  7. Add the cheeses and process until the dip is smooth, then season with salt and pepper.
  8. Pour the dip into a baking dish and top with additional mozzarella and provolone, along with any optional toppings.
  9. Bake at 350°F for 30 minutes until hot and bubbly, then serve with crackers.
