Roasted Cauliflower White Pizza Dip

Instructions
- Preheat the oven to 450°F.
- Toss the cauliflower with olive oil, salt, and pepper in a bowl and spread it on a baking pan.
- Add the garlic cloves (in their skin) to the pan and roast for 25-30 minutes until tender and golden, turning halfway through.
- Remove the garlic from its skin and discard the skin.
- Lower the oven temperature to 350°F.
- Add the roasted cauliflower and garlic to a food processor along with the herbs and spices, and pulse until combined.
- Add the cheeses and process until the dip is smooth, then season with salt and pepper.
- Pour the dip into a baking dish and top with additional mozzarella and provolone, along with any optional toppings.
- Bake at 350°F for 30 minutes until hot and bubbly, then serve with crackers.
