Ingredients

Pizza Dough

  • 8 ounces sharp white cheddar cheese, shredded
  • 4 ounces fontina cheese, shredded
  • 4 ounces gorgonzola cheese, crumbled
  • 4 green onions, chopped
  • cup cilantro, chopped

Chipotle Blue Cheese Avocado Drizzle

  • 1 ripe avocado, peeled and pitted
  • ½ cup buttermilk
  • 1 tablespoon juice from lime
  • 1 teaspoon dried parsley
  • 1 teaspoon dried dill
  • ¼ teaspoon onion powder
  • ¼ teaspoon garlic powder
  • 1 teaspoon Worcestershire sauce
  • 1 inch chipotle chile in adobo
  • 1 tablespoon adobo sauce
  • to taste salt and pepper
  • 4 ounces gorgonzola cheese, crumbled (optional)

Instructions

  1. Prepare the pizza dough by mixing warm water, yeast, and honey, then let it sit until foamy.
  2. Combine flour and olive oil into the yeast mixture to form a dough, then let it rise for about 1½ hours.
  3. Preheat the oven to 425°F and roast the cauliflower with olive oil, salt, and pepper for 20-25 minutes.
  4. Make the chipotle avocado drizzle by blending all the drizzle ingredients until smooth.
  5. Once the cauliflower is roasted, toss it with buffalo sauce.
  6. Prepare the pizza dough by dividing it into two balls and rolling them out into desired shapes.
  7. Spread buffalo sauce on the dough, then layer with cheddar, fontina, roasted cauliflower, and gorgonzola.
  8. Bake the pizzas for 25-30 minutes until the cheese is melted.
  9. Top with green onions, cilantro, and drizzle with the chipotle avocado sauce before serving.
