Cauliflower Pizza Crust

Ingredients

  • 2 ½ cups grated or ground cauliflower
  • ½ teaspoon dried basil
  • ½ teaspoon dried oregano
  • ½ teaspoon garlic powder
  • ¼ cup shredded Parmesan cheese
  • ¼ cup mozzarella cheese
  • kosher salt to taste
  • 1 large egg (slightly beaten)

Instructions

  1. Preheat the oven to 425°F.
  2. Microwave the grated cauliflower covered for 4 minutes, then let it cool.
  3. Press the cauliflower in a fine mesh strainer to remove excess liquid, using paper towels if necessary.
  4. Fluff the cauliflower in a bowl and mix in basil, oregano, garlic powder, Parmesan, mozzarella, and salt to taste.
  5. Add the beaten egg and mix until well combined.
  6. Press the mixture onto a parchment-lined baking sheet to form a pizza shape about ¼ inch thick.
  7. Bake in the oven until golden brown, about 15-20 minutes.
  8. Remove from the oven, add desired toppings, and return to bake until cheese is melted.
  9. Let rest for a couple of minutes before slicing and serving.
