Ingredients

  • 1 pound cauliflower florets
  • 1 large egg
  • cup soft goat cheese
  • 1 teaspoon dried oregano
  • ¼ teaspoon salt

Instructions

  1. Preheat the oven to 400ºF and line a baking sheet with parchment paper.
  2. If using fresh cauliflower, pulse florets in a food processor until rice-like.
  3. Spread the cauliflower rice on the baking sheet and bake for 15 minutes.
  4. Let the cooked cauliflower cool for 10 minutes.
  5. Squeeze excess moisture from the cauliflower using a clean dish towel.
  6. In a bowl, mix the squeezed cauliflower with the egg, cheese, oregano, and salt.
  7. Press the mixture onto the baking sheet to form a round crust about 10-12 inches wide.
  8. Bake the crust for 30 minutes or until golden.
  9. Add toppings and return to the oven for an additional 5-10 minutes until cheese is melted.
  10. Let cool for 5 minutes before slicing.
