Cauliflower Pizza Crust

Instructions
- Preheat the oven to 375ºF and line a baking sheet with parchment paper, drizzling it with 1 tablespoon of olive oil.
- Remove moisture from the cauliflower rice by sprinkling it with salt and letting it sit for 5 minutes, then squeeze out excess liquid.
- Mix the cauliflower rice, Italian seasoning, red pepper flakes, salt, mozzarella, and parmesan in a bowl until combined.
- Scramble the egg in a separate bowl and add it to the mixture, mixing well.
- Form the mixture into a ball and press it flat onto the parchment paper to create a circle about 1/8 to ¼-inch thick.
- Drizzle the remaining olive oil over the crust and bake for 20 minutes.
- Carefully flip the crust using another piece of parchment paper and bake for an additional 10-12 minutes until golden brown.
- Let the crust rest for 10 minutes, then spread pizza sauce on top and add mozzarella cheese and pepperoni.
- Return to the oven for another 10 minutes until the cheese is melted, then garnish with basil.
