Ingredients

The crust

  • 3 cups cauliflower rice, finely processed
  • 1 tablespoon granulated garlic
  • 2 teaspoons Italian seasoning
  • 1 teaspoon red pepper flakes
  • ½ teaspoon salt
  • ½ cup shredded mozzarella
  • ½ cup shredded parmesan cheese
  • 1 large egg
  • 2 tablespoons olive oil, separated

The toppings

  • ¾ cup pizza sauce
  • 1 cup shredded mozzarella cheese
  • cup pepperoni
  • to taste fresh basil for garnish

Instructions

  1. Preheat the oven to 375ºF and line a baking sheet with parchment paper, drizzling it with 1 tablespoon of olive oil.
  2. Remove moisture from the cauliflower rice by sprinkling it with salt and letting it sit for 5 minutes, then squeeze out excess liquid.
  3. Mix the cauliflower rice, Italian seasoning, red pepper flakes, salt, mozzarella, and parmesan in a bowl until combined.
  4. Scramble the egg in a separate bowl and add it to the mixture, mixing well.
  5. Form the mixture into a ball and press it flat onto the parchment paper to create a circle about 1/8 to ¼-inch thick.
  6. Drizzle the remaining olive oil over the crust and bake for 20 minutes.
  7. Carefully flip the crust using another piece of parchment paper and bake for an additional 10-12 minutes until golden brown.
  8. Let the crust rest for 10 minutes, then spread pizza sauce on top and add mozzarella cheese and pepperoni.
  9. Return to the oven for another 10 minutes until the cheese is melted, then garnish with basil.
