Ingredients

The crust

  • 1 large head cauliflower
  • 1 large egg, beaten
  • cup soft goat cheese
  • ½ tsp Italian seasoning
  • ½ tsp garlic powder
  • a pinch salt

The toppings

  • ½ cup marinara sauce
  • ¾ cup shredded mozzarella cheese

Instructions

  1. Preheat the oven to 400°F.
  2. Line a rimmed baking sheet with a silpat mat or parchment paper.
  3. Break the cauliflower into pieces and pulse in a food processor until it resembles a fine, rice-like texture.
  4. Boil water in a large pot and cook the riced cauliflower for about 5 minutes until tender.
  5. Strain the cauliflower in a fine mesh strainer, then transfer to a clean dishtowel and squeeze out as much water as possible.
  6. In a large bowl, combine the drained cauliflower with the beaten egg, goat cheese, Italian seasoning, garlic powder, and salt, mixing well with your hands.
  7. Transfer the mixture to the baking sheet and shape it into a crust, making the edges slightly higher.
  8. Bake the crust for 30 minutes.
  9. Remove from the oven, top with marinara sauce and mozzarella cheese, and bake for an additional 5-10 minutes until the cheese is melted.
  10. Allow to cool slightly before slicing and serving.
