Instructions
- Preheat the oven to 400°F.
- Line a rimmed baking sheet with a silpat mat or parchment paper.
- Break the cauliflower into pieces and pulse in a food processor until it resembles a fine, rice-like texture.
- Boil water in a large pot and cook the riced cauliflower for about 5 minutes until tender.
- Strain the cauliflower in a fine mesh strainer, then transfer to a clean dishtowel and squeeze out as much water as possible.
- In a large bowl, combine the drained cauliflower with the beaten egg, goat cheese, Italian seasoning, garlic powder, and salt, mixing well with your hands.
- Transfer the mixture to the baking sheet and shape it into a crust, making the edges slightly higher.
- Bake the crust for 30 minutes.
- Remove from the oven, top with marinara sauce and mozzarella cheese, and bake for an additional 5-10 minutes until the cheese is melted.
- Allow to cool slightly before slicing and serving.
