Instructions
- Preheat the oven to 400°F and prepare two baking trays with parchment paper.
- Rinse the quinoa and add it to a pot with water, bring to a boil, then cover and reduce to medium-low heat for 15 minutes until tender.
- Transfer the cooked quinoa to a bowl, fluff, and allow it to cool.
- Cut the cauliflower into small pieces and steam until tender, then allow it to cool before cutting into pea-sized pieces.
- Once cooled, combine the quinoa and cauliflower in a bowl with all remaining ingredients and mix thoroughly.
- Using a scoop or spoon, form the mixture into balls and place them on the baking trays.
- Bake for 25 minutes until golden brown.
- Serve warm with your choice of dip or sauce.
