Cauliflower Bites

Ingredients

The base

  • 1 cup quinoa
  • 2 cups water
  • 2 cups cauliflower

The binding and flavoring

  • 2 large eggs
  • 2 tbsp olive oil
  • ½ cup almond flour
  • ¼ cup nutritional yeast
  • 1 tbsp lemon juice
  • 2 tsp onion powder
  • 1 tsp garlic powder
  • 1 tsp smoked paprika
  • 1 ¼ tsp salt
  • 1 tsp black pepper
  • 1 ½ tbsp fresh parsley, chopped

Instructions

  1. Preheat the oven to 400°F and prepare two baking trays with parchment paper.
  2. Rinse the quinoa and add it to a pot with water, bring to a boil, then cover and reduce to medium-low heat for 15 minutes until tender.
  3. Transfer the cooked quinoa to a bowl, fluff, and allow it to cool.
  4. Cut the cauliflower into small pieces and steam until tender, then allow it to cool before cutting into pea-sized pieces.
  5. Once cooled, combine the quinoa and cauliflower in a bowl with all remaining ingredients and mix thoroughly.
  6. Using a scoop or spoon, form the mixture into balls and place them on the baking trays.
  7. Bake for 25 minutes until golden brown.
  8. Serve warm with your choice of dip or sauce.
