Vegan Cauliflower Pizza Bites

Ingredients

The base

  • 1 medium head cauliflower
  • ½ cup vegan shredded cheese
  • 2 tablespoons vegan shredded cheese (extra for topping)
  • 1 flax egg flax egg or vegan egg substitute

The seasonings

  • ¼ teaspoon sea salt
  • ½ teaspoon ground pepper
  • 3 tablespoons marinara sauce
  • ½ teaspoon garlic powder
  • 3 teaspoons Italian seasoning
  • ¼ teaspoon crushed red pepper flakes

Instructions

  1. Preheat the oven to 400°F and line a mini muffin tin with parchment paper.
  2. Remove the leaves from the cauliflower and shred it using a grater or food processor to make cauliflower rice.
  3. Microwave the cauliflower rice covered with a paper towel for 5 minutes, then let it cool.
  4. Wrap the cauliflower rice in a kitchen towel and squeeze out excess moisture.
  5. In a bowl, mix the cauliflower rice with vegan cheese, flax egg, salt, pepper, marinara sauce, garlic powder, Italian seasoning, and crushed red pepper, reserving 2 tablespoons of cheese for topping.
  6. Scoop the mixture into the muffin cups and press down to compact it.
  7. Bake for 12-15 minutes, then top with the reserved cheese and broil for about 1 minute.
  8. Allow to cool on a wire rack for 15 minutes before removing from the pan.
