Vegan Cauliflower Pizza Bites

Instructions
- Preheat the oven to 400°F and line a mini muffin tin with parchment paper.
- Remove the leaves from the cauliflower and shred it using a grater or food processor to make cauliflower rice.
- Microwave the cauliflower rice covered with a paper towel for 5 minutes, then let it cool.
- Wrap the cauliflower rice in a kitchen towel and squeeze out excess moisture.
- In a bowl, mix the cauliflower rice with vegan cheese, flax egg, salt, pepper, marinara sauce, garlic powder, Italian seasoning, and crushed red pepper, reserving 2 tablespoons of cheese for topping.
- Scoop the mixture into the muffin cups and press down to compact it.
- Bake for 12-15 minutes, then top with the reserved cheese and broil for about 1 minute.
- Allow to cool on a wire rack for 15 minutes before removing from the pan.
