Instructions
- If using flax eggs, combine ground flax seeds with warm water and mix well, then set aside to thicken.
- In a medium bowl, combine quinoa, cheese, onion, and chives, then add flour, cayenne pepper, and sea salt, tossing until coated.
- Beat eggs and lemon juice together, then combine with the quinoa mixture and mix well.
- Form the mixture into small balls and refrigerate for 15 minutes.
- Heat a large skillet to medium heat and coat with oil, allowing it to warm before adding the quinoa balls.
- Cook the balls for 5 to 7 minutes per side or until browned.
